In Virginia, the town of Yorktown is known for its history. In my opinion, the town should also be known for its thumbprint cookies at Mobjack Bay Coffee Roasters. They don’t just have great coffee…they have a bakery extraordinaire.
Let’s talk SUGAR. My mother loved sweets and she passed her DNA sugar gene down to me. I have passed on my taste buds to my son and we all share a love of cookies. My mother made the best home-baked butter cookies. and I do miss them. Finally, I have found a shortbread cookie that tastes like a butter cookie and calls me back to childhood.
Mobjack features a shortbread thumbprint cookie topped with fig or raspberry jam. The shortbread is light and satisfying, delicately sweet. The jam perfectly enhances the shortbread. I am also amazed the shortbread has the flavor of a sugar glaze on the top, but no glaze was added! Chef Mary is the mastermind behind these cookies that are, as Mary Berry would say, worth the calories. I am typing now with jam on my fingers and a smile on my face. Thank goodness there is no such thing as a cookie addiction… is there?
