The summer will end soon, and I want to take full advantage of all summer foods—tomatoes, corn, squash, and zucchini. I don’t know about you, but I wait for most of the summer to taste corn on the cob at its peak. My mother Bernice would have my sister and I shuck the corn before dinner as a child. She wanted us to be involved in the cooking process early, but also wanted to avoid us cutting off our fingers with any sharp kitchen instruments. Her solution? Chuck us out to the porch and have us shuck corn. And would we ever make a mess out there!
Is squash one of your summer staples? My mother’s squash casserole was always on the summer menu. If I saw my mother put the squash on the counter and go to the pantry to get the Campbells’ cream of celery soup, I knew what she was about to make. It was a family favorite!
And, of course, the juicy, thick sliced tomatoes were served alone on a plate with salt and pepper. We knew nothing about Caprese Salad, but I wish we did! It is now my go-to summer appetizer.
Let me know your favorite summer farm stand or produce stand! The lingo is regional but the vegetables are usually the same, thank goodness.
